Ingredients:

  • 1 large egg
  • 2 egg whites
  • 1/2 cup skim milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 8 1-inch thick diagonally cut slices of French or Italian bread
  • Cinnamon sugar and reduced-calorie maple syrup (optional)
Cooking Instructions:

In a medium sized bowl, use a wire whisk or a fork and beat the egg and egg whites together until foamy. Add the milk, vanilla, cinnamon, and nutmeg. Beat well; set aside.

Preheat your oven to 200 degrees. Lightly spray a nonstick skillet with cooking spray and heat over medium heat on burner. Dip each bread slice into the egg mixture, turning to coat and then drain the excess back into the dish.

Place one bread slice in prepared skillet. You can put more bread slices in at a time depending on how large your skillet is. Cook until golden brown, turning once, about 1 to 2 minutes per side.

Transfer cooked French toast slices to a plate and keep warm in oven that has been preheated to 200 degrees. Dip the remaining slices in the egg mixture and cook as shown above. Spray your skillet with cooking spray as needed so they won't stick.
